 What are microgreens?

Microgreens are young seedlings of commonly known vegetables and other leafy greens. Microgreen popularity has exploded both with chefs and consumers alike because of their intense flavors, vivid colors, diversified texture, and strong nutritional benefits. The flavor of these greens is very concentrated, so although they are small in size, a little goes a long way. The health benefits in these little guys is off the charts - each variety of microgreen providing a wealth of health benefits for the human body. All varieties contain an average of 40-80 times the nutrient density when compared to the full grown plant. Due to their high antioxidant levels and other nutritional benefits, microgreens are considered a functional food: one that promotes health and/or prevents disease.

Our Story

Founded in 2016 by local farmer and longtime resident Kyle Velvis, Mountain Microgreens is using innovative indoor farming methods to grow gourmet microgreens, and more, for Vail Valley restaurants and residents. Inspired by the rich agricultural history of the Vail Valley, the team at Mountain Microgreens is dedicated to reviving local food production using innovative 21st century indoor farming methods.

Along with a passion to generate a healthy agricultural scene, Mountain Microgreens has a strong focus on sustainability practices to produce and deliver products to market. Utilization of cutting edge LED light technology, vertical growing, water conserving hydroponic growing techniques, use of recyclable packaging containers, and minimizing delivery distances by locating our growing facility close to our customers are just a few of the business practices implemented to reduce our environmental impact while also providing top quality produce year round.

Current production at the Mountain Microgreens facility is heavily focused on a wide range of microgreen varieties for the Vail Valley restaurants. Varieties ranging from the hearty sunflower shoots and pea tendrils to the intense flavors and colors of arugula and red radish are sure to fulfill the desires of any culinary enthusiast. Future expansion of the Edwards, CO facility will integrate the production of other gourmet herbs and baby greens to compliment the microgreen varietals currently offered.
